2 cups unbleached white flour
1 tablespoon baking powder
3/4 cup sugar
1/2 teaspoon salt
4 tablespoons cold butter or margarine, cut into bits
1 large banana, sliced
1/2 cup nonfat milk
3 egg whites

1/2 cup fresh bread crumbs
1/4 cup finely chopped pecans
1/2 teaspoon cinnamon
3 tablespoons espresso syrup

.1. Preheat oven to 350° and pan spray an 8×8-inch baking pan. In a food processor, combine flour, baking powder, sugar, and salt. Add butter bits and pulse until mixture resembles coarse meal. Transfer mixture to a large bowl and make a well in the center.

2. In the food processor bowl, combine banana slices, milk and egg whites. Process until smooth. Add to dry ingredients in bowl and stir to combine.

3. In a small bowl, mix together bread crumbs, pecans, and cinnamon.

4. Spread 1/2 of the cake batter into prepared pan and top with 1/2 cup of the crumb mixture. Drizzle with espresso syrup. Spoon remaining batter on top of the filling and sprinkle top with remaining crumb mixture. Bake in the middle of the oven for 35 to 40 minutes, until golden. Serve warm or at room temperature.
