Chocolate Rum Pecan Cookies

A cookie for celebrating relaxing times at home. One of our favorite recipes. The cookies are simply delicious. Give this recipe a try. You won’t regret it.

1/4 cup of vegetable oil
1/4 cup of soy milk
1/3 cup of maple syrup
1/3 cup of sugar
3 Tbsp. dark jamaican rum
2 oz. unsweetend chocolate melted.
1 cup whole wheat pastry flour
1 cup unbleached all-purpose flour
1/2 tsp. baking soda
1/2 cup chopped pecans

Preheat oven to 350 degrees F. Combine oil, soy milk, sugar, and syrup and whip until blended. Add rum and melted chocolate and mix well in a separate bowl. Sift together flour and baking soda, then add to the chocolate mixture and mix well. Fold in pecans. Drop by teaspoonfuls onto a greased cookie sheet and bake for about 8 minutes. Do not allow the edges to darken or burn.
