6 ounces vegetarian pepperoni, chopped
1/2 cup chopped green bell pepper (about 1/2 medium pepper)
1 4-1/2 ounce can chopped black olives
1/4 cup chopped oil-packed sun-dried tomatoes, plus 1 tablespoon oil from jar
1-1/4 cups boiling water
2 cups packaged baking mix
8 ounces shredded mozzarella cheese
Cooking spray or oil

1. Preheat oven to 400°.
2. In a large bowl, combine pepperoni, bell pepper, olives, tomatoes, and tomato oil. Add boiling water, stir, and let sit for about 2 minutes.
3. Lightly spray or oil a standard (approximately 10 x 15-inch) baking sheet with sides.
4. Add baking mix to bowl and mix to combine. Add 1/2 of the mozzarella and stir until just incorporated.
5. Spread mixture into prepared pan and bake for 10 minutes. Sprinkle with remaining cheese and bake for 10 minutes more, until cheese is lightly browned. Let cool somewhat before cutting. Serve warm or at room temperature.
