Vegan White Diamond Cookies

3/4 cup granulated sugar
3/4 cup brown sugar
1-1/2 cups peanut butter
3/4 cup plain soy milk
1 teaspoon vanilla
2/3 cup cocoa powder
1 teaspoon baking soda
1 cup unbleached white flour
2 tablespoons ground flaxseed
1 cup white chocolate chips
Cooking spray or parchment

1. Preheat oven to 350°. Lightly spray a nonstick cookie sheet or line with parchment.
2. In a large mixing bowl, by hand or with an electric mixer, cream together sugars and peanut butter. Mix in soy milk.
3. In a separate bowl, sift together cocoa and baking soda. Stir in flour and ground flaxseed. Add dry mixture to sugar mixture, stirring to mix well. Stir in chocolate chips. (Mixture will be somewhat crumbly. If it’s too dry, work in 1 or 2 tablespoons of soy milk.)
3. Using a small scoop or tablespoon, drop dough onto prepared sheet about 2 inches apart. Flatten dough with fingertips and bake for 8 to 10 minutes, until done. Let cool for a few minutes on sheet, then remove to a rack and repeat with remaining dough.

Makes about 5 dozen
