What the Colors Mean

Blue and purple fruits, like blueberries, contain a group of antioxidants called anthocyanins. The chlorophyll in leafy vegetables gives plants their green color. The darker the green, the more chlorophyll the vegetable contains. Red is caused by lycopene and this antioxidant is what gives tomatoes its red color. Yellow and orange come from the carotenoids and these antioxidants help with reducing the risk of cataracts and macular degeneration.
